Boil 'em first and the skins will fall and flake right off. During my sojourn in the land of leprachauns, I worked briefly in a sort of restaurant. They had this machine which when infused with a constant stream of water and filled with tubers could be used to peel potatoes simply by cranking a handle. It was very handy and almost miraculous, but it kept breaking down.
